PURPOSE: A bean curd containing barley sprouts and a manufacturing method thereof are provided to enable an eater to feel chewing tactile sensation and spicy taste. CONSTITUTION: A cool wind less than 0°C is applied to the barely sprout and shattered(S2). The barely sprout powder is manufactured. A bean is inserted into the water and bean curd dregs and bean milk are separated by shattering and filtering the bean. The soy oil is heated. An uncurdled bean curd is manufactured by injecting coagulant into the heated soy oil. The uncurdled bean curd is compressed and the bean curd is manufactured. A cool dry process is executed by applying the cool wind at the temperature of -10 or -20°C for 1 or 10 hours. The barley sprout powder 1 or 10 weight part is added to the bean 100 parts used in the soy oil isolation step(S3).
