摘要 <p>Disclosed are a method for continuously fermenting alcohol from a sugar starting material, wherein yeast and unsaccharified residues can be separately recovered from a fermented liquor, and a device therefor. The method for continuously fermenting alcohol from a sugar starting material comprises a saccharification step, a fermentation step, an unsaccharified residue-separation step for separating unsaccharified residues from a fermented liquor, and a fermenting microorganism-separation step for separating fermenting microorganisms from the fermented liquor, and is characterized in that the unsaccharified residues thus separated are returned back to the saccharification step, and the fermenting microorganisms thus separated are returned back to the fermentation step. The device for continuously fermenting alcohol from a sugar starting material comprises a saccharification tank (1), a fermentation tank (2), a unit (3) for separating unsaccharified residues and a unit (4) for separating fermenting microorganisms, and is characterized by being equipped with a return pipe (34) for returning the separated unsaccharified residues to the saccharification tank (1), and a return pipe (41) for returning the separated fermenting microorganisms to the fermentation tank.</p>
