PURPOSE: A non-heat treated grain syrup and a manufacturing method thereof are provided to minimize the loss of the nutrient, the taste, the flavor, and the color of raw materials. CONSTITUTION: A manufacturing method of a non-heat treated grain syrup comprises the following steps: rapid-freezing raw materials in -40~50deg C, to make the moisture content less than 5%(S100,S200); micro-crushing the dried raw material into 200~5,000 mesh(S300); mixing 5~40wt% of crushed raw material with 60~95wt% of sugar solution to make a mixture(S400); and fermenting the mixture for 1~3 days in 20~25 deg C(S500).
