PURPOSE: A jerky stick comprising dietary fiber and protein from rice bran and a preparation method thereof are provided to exhibit excellent mouth feel as well as nutritional properties. CONSTITUTION: A method for preparing a jerky stick comprises the following steps of: running pork through a meat grinder in order to separate ground meat and bound meat; adding salt and phosphate to the bound meat, slicing it, and blending with the ground meat; adding dietary fiber and protein extracted from rice bran, tumbling for 30 minutes in a vacuum tumbler; putting the tumbled jerky meat into a filling machine to fill a casing; and drying and cooling the jerky meat. |
