PURPOSE: An apparatus for collecting sap by gravity using an air separator is provided to prevent overflow of sap in case of excessive volume of sap. CONSTITUTION: An apparatus for collecting sap comprises: a vacuum sap container with a sap entrance and exit hole(13) and is closed under vacuum condition; a tip member(20) of hollow type, which receives sap; a sap transfer unit(30) which connects the tip member and sap container and to let only sap flow into the vacuum sap container. The sap transfer unit has: a first connection pipe which is connected to the tip member at one end; an air separator which is connected to the first connection pipe at the other end; a second connection pipe which is connected to the air separator; and a needle member which is coupled to one end of the second connection pipe.
