<P>PROBLEM TO BE SOLVED: To provide a method and apparatus for safely producing a fresh collagen as a material of cosmetics or food stuff at low cost in a short time from a green skin of mammal through a simple production process using no chemicals needing secondary treatment and minimizing the kind and addition amount even to be added in the material. Ž<P>SOLUTION: The method for producing collagen from the green skin of mammal includes: performing antimicrobial cleaning of the green skin of mammal; sequentially crushing the green skin to mold and solidify in a pellet form; freezing after dehumidifying to freeze-expand; freeze-collapsing by applying a low-frequency current; thawing while heating and agitating after addition of a fatty acid alcohol; applying high pressure; separating and extracting a collagen component by centrifugal separation; removing the alcohol by vacuum-dehumidifying the separated collagen; and then pulverizing the dehumidified collagen.
