摘要 PURPOSE: A novel Lactobacillus plantarum Meoru0711 is provided to simplify wine production process and to shorten production period. CONSTITUTION: Lactobacillus plantarum Meoru0711(deposit number KACC 91436P) has a property of fermenting allogenic lactic acid. Lactobacillus plantarum Meoru0711(deposit number KACC 91436P) is use for manufacturing wine by alcohol-malolactic fermentation. A method for making the wine comprises: a step of pulverizing fruits and putting the fruits into a fermentation container; a step of inoculating yeast and Lactobacillus plantarum Meoru0711(deposit number KACC 91436P); and a step of performing first and second fermentation.
