FIELD: food industry. ^ SUBSTANCE: invention relates to the manufacturing technique of flour confectionery products. Method includes preparation of recipe components. Ajiwan is extracted by liquid nitrogen with corresponding miscella separation. Yacon is cut and dried in microwave field at preset process parametres. Yacon is additionally dried by convective method, impregnated with separated miscella with simultaneous increase of pressure. Pressure is reduced down to atmospheric one with simultaneous freezing of yacon. The yacon is cryo-ground in medium of released nitrogen to produce flour. Then one undertakes production of dough from prime wheat flour, flour produced from yacon using described technology, sugar powder, yolks, salt, soda, butter and water taken as per specified ratio, its moulding in the form of sheets and baking. ^ EFFECT: produced sugar waffles have improved consistency, coffee taste and flavour with no coffee added to the formula. |
