<P>PROBLEM TO BE SOLVED: To produce a compost containing a high concentration of soluble phosphor which can be easily absorbed by plants, by processing shochu lee, food processing waste discharged during the food processing, and processing incineration ash of chicken dropping containing hardly soluble phosphor. Ž<P>SOLUTION: Shochu lee, food processing waste discharged during the food processing, is mixed with the incineration ash of chicken dropping which is a phosphor-containing substance containing hardly soluble phosphor. Subsequently, the mixture is added with soil microorganisms and fermented to increase the concentration of soluble phosphor to produce the compost. When the incineration ash of chicken dropping is added with a mineral acid (hydrochloric acid) or an organic acid (bean curd refuse), the concentration of soluble phosphor cannot be increased. However, the concentration of soluble phosphor can be increased by mixing the incineration ash of chicken dropping with shochu lee. Moreover, by composting with fermentation after adding soil microorganisms to the mixture of the incineration ash of chicken dropping and shochu lee, the concentration of soluble phosphor can be further increased.
