<p>The apparatus has a main cutter (9) whose body (10) has an end with a sleeve that rotates around a vertical axle (4) and is vertically displaced along the axle. A blade (11) fixed at a lower part of the body is longitudinally extended between the end and another end of the body and cuts an upper surface of a cheese piece (3). A roller is placed on a bearing of the body higher than a lower part of the body and parallel to the blade. The roller freely rolls on the upper surface of the piece during cutting. Distance between the roller and the blade determines a cutting thickness.</p>
