PURPOSE: A method for preparing a fermented egg food using lactobacillus is provided to increase egg consumption and to extend the shelf life. CONSTITUTION: A method for preparing a fermented egg food using lactobacillus comprises the following steps of: mixing an egg liquid and sugar, and fermenting the mixture with lactobacillus; adding the fermented mixture to the egg liquid, and fermenting it; heating the mixture to obtain congelation; and separating into the congelation and fermented liquid. The egg liquid comprises water and liquid selected from the group consisting of whole egg liquid, yolk undiluted liquid, white undiluted liquid, and their mixture. The sugar is added by 6-8wt% of the mixture. |
