PURPOSE: A method for manufacturing Tteok by mixing natural ingredients selected among mulberry fruit, Cucurbita moschata, and mulberry leaves without artificial coloring agent is provided to improve preference of Tteok and health. CONSTITUTION: A method or manufacturing Tteok comprises: a step of immersing rice in water at 15-20°C and removing foreign materials and moisture; a step of mixing 10-50g of salt per 1kg of rice and pulverizing; a step of mixing one natural ingredient powder or concentrate selected from mulberry fruits and leaves and Cucurbita moschata and pulverizing; a step of heating for 15-20 minutes and maturing for 5-10 minutes; and a step of pressing the ingredients at 40-45°C and molding and cutting at 35-45°C. The Tteok is Garaetteok(bar rice cake), Jeolpyeon(flat rice cake with flower pattern imprinted), and slided rice cake.
