<P>PROBLEM TO BE SOLVED: To provide a food defoamant for effectively solving troubles by foaming, in view of the fact that many troubles by foaming are reported in a food producing and processing process, and the occurrence of bubbles remarkably gives influences in production, such as a decrease in production efficiency, yield reduction, and quality deterioration, to provide a method for producing the food defoamant, and to provide food using the food defoamant. <P>SOLUTION: This food defoamant contains 12-15 wt.% of polyglycerol unsaturated fatty acid ester, 8-12 wt.% of glycerol unsaturated fatty acid ester, 4-8 wt.% of glycerol saturated fatty acid ester, and 65-76 wt.% of saccharide. <P>COPYRIGHT: (C)2010,JPO&INPIT |
