PURPOSE: A bun stuffing, which is made using loach, is provided to obtain excellent functionality and to contain a large amount of superior nutrients by including steamed loach without including bones, herb, and roasted bean flour. CONSTITUTION: A bun stuffing, which is made using loach, comprises 20.0 parts by weight of steamed loach without including bones, 1.0 part by weight of basil, 3.6 parts by weight of devil's-tongue jelly, 30.0 parts by weight of soybean protein, 8.6 parts by weight of fat emulsion, 3.8 parts by weight of roasted beef taste base, 2.6 parts by weight of composite seasoning extract, 0.4 parts by weight of sesame oil, 10.0 parts by weight of chives, 8.0 part by weight of green onion, 3.0 parts by weight of onion. 0.8 parts by weight of garlic, 0.4 parts by weight of ginger, 3.6 parts by weight of cellophane noodles, and 0.6 parts by weight of roasted bean flour.
