PURPOSE: A method for manufacturing powder kimchi is provided to remove the smell of kimchi by cooling, drying, and pulverizing ripened kimchi and to enable a user to carry the powder kimchi by storing the powder kimchi in a bottle or a lid. CONSTITUTION: A method for manufacturing powder kimchi comprises the following steps: manufacturing aged kimchi by mixing cabbage, radish, sugar, pepper powder, wheat flour paste, chives, garlic, ginger, an anchovy sauce, salted shrimps, salt, and kelp powder and aging the mixture; quickly freezing the aged kimchi in a cooling device of (-)70°C and drying the frozen aged kimchi at a vacuum dryer; making the dried kimchi into powder by pulverizing the dried kimchi; and storing the powder kimchi in a bottle or a plastic bag.
