PURPOSE: A composition of fat-soluble active components containing a protein-polysaccharide conjugate is provided to obtain optical transparency, emulsion stability, color intensity, and color stability using a different emulsification technique. CONSTITUTION: A composition of fat-soluble active components comprises: the fat-soluble active components; proteins; and polysaccharide. The weight ratio of the polysaccharide is 1:5 or more; The fat-soluble active components are selected from vitamin A, D, E, K or their derivatives, polyunsaturated fatty acid, oleophilic components, carotenoid, aroma materials, or their mixture. The fat-soluble active component is the carotenoid, especially beta-carotene, lycopene, lutein, bixin, astaxanthin, apocarotenal, beta-apo-8'-carotenal, beta-apo-12'-carotenal, canthaxanthin, cryptoxanthin, citranaxanthin, and/or zeaxanthin. |
