PURPOSE: A method for manufacturing chopped noodles(kalguksu) is provided to prevent the noodles from being broken and to obtain active components of the chlorella and mushroom by mixing an inclusion agent to hot water extract of chlorella, hot water extract of mushroom, and wheat flour. CONSTITUTION: A method for manufacturing chopped noodles(kalguksu) containing chlorella comprises the following steps: obtaining an extract by extracting the chlorella at 80-100°C for 15-20 minutes or hydrothermally extracting the chlorella for 1 hour or more; obtaining powder by adding cyclodextrin to the chlorella extract at 15-30°C and 750-770 Torr and drying the mixture; obtaining an extract by heating mushroom at 45-120°C for 5-7 hours and concentrating the mushroom; adding lecithin to the chlorella powder and the mushroom extract and uniformly mixing the mixture with edible oil, wheat flour, and water; and extruding the mixture.
