PROBLEM TO BE SOLVED: To provide a workpiece holding method and a workpiece processing method capable of directly processing a cast part having a black skin as a product at high accuracy without a reference face processing step. SOLUTION: In this method, a workpiece is held by a plurality of holding means nipping upper and lower faces of a workpiece A which is a processing object of a processing machine 10. The height of a lower side holding face contacting a lower face of the workpiece A out of the holding means is set as a height when holding a reference workpiece having a flat plane and the identical plane in an area formed in advance and held by at least the holding means.
