<P>PROBLEM TO BE SOLVED: To provide a method and a device for freezing protein crystals, for efficiently removing a low-temperature gas layer on the surface of liquid nitrogen without blowing nitrogen gas. Ž<P>SOLUTION: In the method for freezing protein crystals for inserting the protein crystals into liquid nitrogen LN for freezing, while gas forming the low-temperature gas layer 18 present on the surface of the liquid nitrogen LN stored in a container 13 is removed from the surface 18 by suction by using a gas carrying passage formed of a wall member 12 and a wall of the container 13 and a fan 19, the protein crystals are made to pass through the surface of the liquid nitrogen LN and inserted into the liquid nitrogen LN. When the protein crystals are inserted to the liquid nitrogen LN, since the low-temperature gas layer 18 is removed, the protein crystals are promptly frozen by the liquid nitrogen LN.
