<P>PROBLEM TO BE SOLVED: To provide puffed confectionery allowing a person, who eats while controlling a calorie, to feel excellent crispy feeling. <P>SOLUTION: The puffed confectionery is produced by forming potato pellets in a pellet forming process S1, temporarily drying the pellets in a pellet drying process S2, adjusting a moisture content of the pellets to 14-23 wt.% in a pellet moisture content adjusting process S3, spraying oil to the pellets in an oil spraying process S4, puffing the pellets by pressurizing and heating in a puffing process S5, attaching seasoning to the pellets after spraying oil in a seasoning process S6, and baking the product by far-infrared radiation ray in a baking process S7. The physical properties of the puffed confectionery is such that a moisture content is 2-4 wt.%, a distortion ratio to 18N load is 32-46%, a distortion ratio to 15N load is 29-42%, a load to bring a distortion ratio to 30% is 7.98-15.99N, and an apparent specific gravity is 0.035-0.074g/cm<SP>3</SP>. <P>COPYRIGHT: (C)2010,JPO&INPIT |
