Class, 58 A process for puffing cereal grains comprises maintaining steam pressure in an elongated confined zone having an orifice opening at its outlet end through which a high velocity current of steam continuously discharges, moving a stream of loose individual grains continuously through the steam atmosphere in the zone to the outlet end, and conveying the loose grains as they arrive at the outlet end through the orifice in the current of steam whereby a continuous stream of individual puffed grains is discharged from the.zone. As shown the grain to be puffed continuously enters via hopper 16, pressure locking feed valves 17, 19 on either side of feed chamber 18 in which the steam pressure is increased above that on the orifice 5 (referred to below) by admitting steam through pipe 20, the inlet end 3 of the confined zone maintained in cylindrical containers 1 interconnected at alternate ends as shown at 2, and steam jacketed to prevent condensation of steam and passes by a screw conveyer to the outlet conduit 4 and orifice 5 at the end of the last container, whilst pressure steam is supplied via a pipe 12 provided with a pressure control valve 13 connected to the last container 1 near its outlet end, the steam thus admitted to the last container filling all the containers and also causing a higher velocity current steam to escape continuously through the outlet 4 and orifice 5 carrying with it a continuous stream of puffed grain. The grain is preferably preheated to 190‹ F. to 260‹ F. before entering the pressure zone.
