PROBLEM TO BE SOLVED: To provide a method for efficiently producing a high-purity monoacylglycerol without damaging lipase activity.

SOLUTION: The method for producing the fat and oil highly containing the monoacylglycerol includes reacting a fatty acid or a lower alkyl ester thereof with glycerol in the presence of an immobilized partial glyceride lipase having an esterification activity per unit surface area of an immobilizing carrier of 100-140,000 U/m2.
