<P>PROBLEM TO BE SOLVED: To provide an instrument for measuring the amount of the dried solid substance of rice washing water by an optical system capable of measuring the amount of the dried solid substance of the rice washing water in a short time by employing a multiple regression analyzing technique. Ž<P>SOLUTION: The instrument 1 for measuring the amount of the dried solid substance of the rice washing water by the optical system has a cell 2 housing preliminarily prepared rice washing water L, an optical measuring instrument 3 performing the optical measurement of the rice washing water L in the cell 2 by visible light and ultraviolet rays to output the transmitted light quantity signal of the visible light and the ultraviolet rays and an arithmetic/output device 4 estimating the amount of the dried solid substance of the rice washing water L being a measuring target on the basis of the transmitted light quantity signal selected from respective transmitted light quantity signals and the calibration curve data based on the preliminarily stored and held known corresponding transmitted light quantity data of the rice washing water L by multiple regression analysis to output the same.
