<P>PROBLEM TO BE SOLVED: To extract an effective ingredient from a persimmon of an off-specification product that is discarded because of upgrading of liking or inferior appearances, a fully ripened product or a processing byproduct or the like, further a pericarp of a persimmon that is not eaten and mostly discarded, and to make effective use of the ingredient. <P>SOLUTION: A shredded or ground fruit and/or pericarp of a persimmon is uniformly dispersed in an aqueous liquid where acetic acid is present and is subsequently subjected to solid-liquid separation to give solid matter and liquid matter. An alcohol is added to the resultant solid matter and liquid matter, which is then subjected to solid-liquid separation to give a functional composition comprising alcohol-solubles. Further, ethyl acetate is added to the alcohol-solubles to remove ingredients insoluble in ethyl acetate. Use of a persimmon having been irradiated with far-infrared radiation gives a composition excellent in functionality that can be utilized as a raw material of a pharmaceutical or a health food.
