<P>PROBLEM TO BE SOLVED: To provide an instrument for measuring the COD of rice washing water by an optical system capable of obtaining the COD value of the rice washing water with high precision by making an environmental temperature constant when measuring the COD of the rice washing water and dispensing with the correction of temperature. Ž<P>SOLUTION: The instrument 1 for measuring the COD of the rice washing water by the optical system has a test tube 2 housing a definite amount of a rice sample, a water supply device 3 with a heat insulating function for supplying water of constant temperature, an ultrasonic washing device 4 with a heat insulating function for performing the suspension to the rice sample in a sample housing means at constant temperature, a strainer 5 and a cell 6 both of which strain the suspended rice sample to obtain the washing water of the rice sample, an optical measuring means 7 for measuring absorbance with respect to the washing water of the rice sample, and a COD operating processing means 8 calculating the COD value of the washing water of the rice sample on the basis of the measuring signal by the optical measuring means 7 and outputting an operation result.
