PURPOSE: A method of manufacturing a sap beverage is provided to minimize the effect on the taste and nutrients of natural state of sap, and to effectively sterilize the sap. CONSTITUTION: A method of manufacturing a sap beverage comprises the following steps: collecting sap; filtering the sap to remove impurities; secondly filtering the filtered sap using a filter membrane with a pore size of 20~100 micrometers; sterilizing the filtered sap with an oxidative sterilization device(20); and filling a container with the sterilized sap, and sealing. The oxidative sterilization device includes a sap storage tank(21), an inlet tube(22), an outlet tube(23) and an AOP sterilization lamp(24).
