A MASS PRODUCTION METHOD OF BLACK GINSENG WITH HIGH ACTIVE COMPOUNDS USING SODIUM CARBONATE

PURPOSE: A method for manufacturing black ginseng is provided to remarkably increase the content of active components by dipping fresh ginseng into sodium carbonate and to enable mass production by minimizing production time and costs. CONSTITUTION: A method for manufacturing black ginseng comprises a step of dipping fresh ginseng which is 4-6 years old into sodium carbonate and drying the ginseng. The concentration of the sodium carbonate is 0.1-10%. The heating time of a steaming process is 15-120 minutes. The heating temperature of the steaming process is 60-120°C. The steaming process and a drying process are repeated 1-3 times.
