FIELD: food industry. ^ SUBSTANCE: invention relates to technology of canned compotes manufacturing. Method of production includes preparation of the recipe components, their cutting, drying in microwave field at preset process parametres, girasol-sunflower cutting and frying. Acorns are fried and minced. Girasol-sunflower and acorns mixed in mass ratio 1:1. Obtained mixture is extracted by drinking water at preset process parametres. The obtained extract is filtered. Syrup is prepared based on the extract. Quince and syrup are packaged, vacuum-sealed and sterilised. ^ EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled parts in end product without reduce of product's storage time. |
