PURPOSE: A method for manufacturing natural seasoning using vegetable materials without chemical seasoning is provided to supplement beneficial nutrition and enhance food taste. CONSTITUTION: A method for manufacturing natural seasoning comprises: a step of extracting Chinese cabbage, radish, onion, garlic, scallion, and ginger by hot water at 105°C for two hours to obtain vegetable extract and concentrating the extract by 40-60 brix; a step of juicing onion and garlic at 30-40°C; a step of extracting Lentinus edodes by hot water and concentrating; a step of extracting kelp for 24 hours and concentrating; a step of mixing the prepared ingredients, soy sauce, purified salt, and dextrin and maintaining at 90°C for 30 minutes; and a step of vacuum-drying.
