PROBLEM TO BE SOLVED: To provide a processing apparatus of bulb vegetables, which can cut the bulb vegetables to a predetermined stem length at a preparing process by a processing apparatus and at the same time, can carry out automatically up to a size screening to improve the quality and workability. SOLUTION: A matched pair of conveyors (endless conveying bodies) nipping and conveying a root part of the stem of the bulb vegetables are provided, a cutting part 17 cutting the stem of the bulb vegetables at the predetermined length is provided on the front part lower side of the processing, nipping and holding conveying body 10 having the cutting part 17, and at the same time, a sorting part 6 carrying out the size screening by large and small bulb vegetables is provided at the rear of the cutting part 17. The sorting part 6 provides an opening angle between the right and left sorting, nipping and holding conveying bodies 11 (endless conveying bodies) to enlarge progressively the nipping and holding interval of the bulb vegetables by the sorting, nipping and holding conveying bodies 11.
