To easily, efficiently and economically provide an antifreeze substance, which has such a good antifreeze activity as being usable in practice, by employing safe steps that are applicable to food production. Disclosed is a first method for producing a plant extract containing an antifreeze substance characterized by comprising: a step for drying a plant containing the antifreeze substance; and a step for extracting the antifreeze substance from the dried plant. Also disclosed is a second method for producing a plant extract containing an antifreeze substance characterized by comprising: a step for extracting the antifreeze substance from a plant; and a step for treating the extract with an adsorbent.
