DRIED SEA SQUIRT AND DRYING PROCESS USING MULTIPLE VACUUM FREEZING DRYING THEREOF

PURPOSE: A dried sea squirt which is dried using multiple vacuum freeze-drying processes and a method for manufacturing the same are provided to prevent tissue contraction due to a drying process, to prevent nutrient loss, and to quickly restore the taste and flavor of the sea squirt. CONSTITUTION: A method for manufacturing a dried sea squirt using multiple vacuum freeze-drying processes comprises: a step(S100) of separating the flesh of the sea squirt from the shell of the sea squirt; a step(S200) of washing the sea squirt flesh using running water; a step(S300) of firstly removing moisture from the washed sea squirt flesh at (-45)-(-40)°C for 100-140 minutes through vacuum freeze-drying processes; a step(S400) of secondarily removing moisture from the sea squirt flesh at (-25)-(-20)°C; and a step(S500) of thirdly removing moisture at 0°C for 200-280 minutes; and a step(S600) of additionally eliminating moisture from the sea squirt flesh at 25~35°C.
