<p>The method comprises targetedly passing the wort steam, which is developed during the wort boiling and originates from an external boiler (4), through the wort for desorption of undesirable aroma substances, where the boiler carries out a closed boiling and/or flash evaporation. Before the targeted passage through the wort, the wort steam is separated from the wort leaving the boiler. The wort is present in a brew kettle during the boiling or in another container. The wort steam is guided for the targeted passage to the wort. The wort is pumped for targeted passage to the wort steam.
