W/O/W-TYPE EMULSION COMPOSITION CONTAINING ISOHUMULONE CLATHRATE AND METHOD FOR PRODUCING THE SAME

<P>PROBLEM TO BE SOLVED: To provide a composition having decreased bitter after-taste as well as foretaste in bitter taste of isohumulones and having high stability. Ž<P>SOLUTION: The W/O/W-type emulsion composition is composed of an inner water-phase added with a γ-cyclodextrin (γCD) clathrate of isohumulones and lecithin, an oil phase, and an outer water-phase. The lecithin is preferably selected from a group consisting of unmodified lecithin, enzyme-decomposed lecithin and chemically treated lecithin.
