FIELD: food industry. ^ SUBSTANCE: invention refers to the food industry, namely to production technology of coffee substitutes in the form of instant powder. The method provides preparation of prescription components, extraction of jeera with liquid nitrogen with separation of the relevant miscella, cutting, drying in the microwave field at the given parametres of the process and frying of girasol-sunflower l, frying the grains of barley and rye; mixing of girasol-sunflower, grains of barley and rye, soaking the obtained mixture with separated miscella with simultaneous increase of pressure, and release of pressure up to atmospheric with simultaneous freezing the mixture and its cryomilling in medium of the evolved nitrogen. ^ EFFECT: method enables to obtain flavoured coffee drink from non-traditional raw materials using non-waste technology. |
