FIELD: food industry. ^ SUBSTANCE: invention relates to technology for complex processing of vegetables, namely girasol-sunflower. The method of complex processing of girasol-sunflower involves washing girasol-sunflower, milling it, filling with acidified water until the pH of the extraction mixture is 5-6.5 with a ratio of phases 1:1, extraction for 30-40 minutes, and the extraction mixture is preliminarily electro heated to the temperature 55-65C, the extract is consistent transmitted through membranes with a threshold retention of 6-8 kDa and 0.8-2 kDa, with low-molecular fraction returning to the stage of extraction, the remaining fractions are concentrated by reverse osmosis to the solids content of at least 15%, the concentrate of high-molecular fraction is combined with the meal to obtain gelating concentrate, and the remaining concentrate which is a solution containing inulin, purified from accompanying substances, is photo-sterilisated and packed into aseptic conditions. ^ EFFECT: method enables to implement complex processing of girasol-sunflower with complete recycling of nutrient and bioactive substances. |
