<P>PROBLEM TO BE SOLVED: To provide a preparation of polyphenols in which the polyphenols exist stably for a long period of time in water, also without accompanying a color change over time such as browning, etc., and excellent in preservation stability as an aqueous liquid (aqueous solution) useful as a blending agent to a food, beverage, cosmetic, medicine, etc. <P>SOLUTION: This polyphenol preparation is provided by dissolving at least one kind of polyphenols, at least one kind of cyclodextrin and at least one kind of an antioxidant in purified water, dissolving the polyphenols by a concentration at or less than the solubility of the polyphenols, dissolving the cyclodextrin by ≥(1/10) molar concentration based on the molar concentration of the polyphenols and also by the concentration of at or less than the solubility of the cyclodextrin, and dissolving at least one kind of the antioxidant by the concentration at or less than the solubility of the antioxidant. <P>COPYRIGHT: (C)2010,JPO&INPIT |
