PURPOSE: Chinese noodles and a manufacturing method thereof are provided, which can improve taste of food using Chinese noodles. CONSTITUTION: A Chinese noodles manufacturing method comprises: a step(S10) of making the dough formed into the colloidal state by mixing water and starch a stirring tube; a step(S20) of supplying the dough of the colloidal state to the supply hopper of the extrusion machine; a step(S30) of making the dough of the solidity by putting dough of the colloidal state into in the extrusion machine and heating it to the temperature of 100~120°C; a step(S40) of making surface circumference of the Chinese noodles body rough; and a step(S50) of cutting, measuring, freezing, defrosting, drying and packaging the shaped Chinese noodles. |
