<P>PROBLEM TO BE SOLVED: To provide a kitchen knife which enables the cut piece stuck to the blade plate surface to be removed easily when cutting an object and can maintain the strength of the blade plate. Ž<P>SOLUTION: One of the blade plate surfaces of the blade plate part (M) is provided with an arcuate surface (4) bent toward the arc between the blade (1) and the back part (3) and a thick part (6) where the thickness of the blade plate is the largest at a position relatively near the back part (3) from the middle of the blade (1) and the back part (3), and the blade plate surface has an arcuate form wherein the thickness is gradually reduced from the thick part (6) toward the blade (1) and the back part (3).
