The invention relates to the wine industry, namely to a process for the production of wines saturated with carbon dioxide. The process, according to the invention, provides for the preparation and treatment of the wine stocks, saturation with carbon dioxide of endogenous and exogenous origin with their simultaneous deoxygenation, optional storage and treatment in tanks under pressure, as well as air conditioning and isobaric bottling of finished wines. At the same time, the saturation with carbon dioxide is carried out in open tanks under hydrostatic pressure of wine stocks therefrom to the achievement into their lower layers of a pressure corresponding to the wine category, then the given part of the wine is isobarically transfused with the introduction into the open tank of a wine stock part to compensate the transfused quantity, the process being carried out in a pulsating or continuous flow.
