摘要 The invention relates to the food industry, in particular to a food product from tomatoes and a process for the production thereof. The food product from tomatoes contains, in mass %: preliminary dried and pickled tomatoes 45.0...60.0, vegetable oil 55.0...40.0 and spices 3.0...6.5. The process for the production of the product includes the preliminary preparation of tomatoes, cutting into parts thereof, placement of tomato parts on trays with the cut part upwards, drying with warm air to the humidity of 12...25%, maintaining the temperature inside the tomato parts up to 55...58?C, preparation of the marinade from an aqueous acetic extract of spices, table salt, sugar and ascorbic acid, maintenance of the dried tomatoes in marinade in a ratio of 1:1 up to the attainment of humidity of 30...45%, separation of tomatoes from the marinade, laying thereof in jars, addition of spices, vegetable oil, sealing of jars and pasteurization. The result of the invention is to simplify the process for the production of a product with improved quality, with a wide spectrum of use and a long-term shelf life.
