PURPOSE: A suction vacuum-type drying device for fermenting food stuffs is provided to maintain the optimum fermentation and built environment by stirring the food of a fermentation chamber by rotating stirring blades. CONSTITUTION: A suction vacuum-type drying device for fermenting food stuffs comprises a fermentation chamber(10), a stirrer(20), a steam chamber(30), a steam cooling unit(40), and a gate(50). The fermentation chamber comprises a food insert hole(11), a port(12), and vacuum suction pipes(13). The fermented food is exhausted through an outlet. The stirrer is rotatably installed in the internal space of the fermentation chamber. A plurality of stir edges(22) of the stirrer is rotated with the drive of the motor and stirs food. The steam chamber heats the fermentation chamber with the steam to the high temperature. The steam cooling unit cools the steam created in the fermentation drying process of the food. The gate selectively opens and closes the outlet.
