摘要 <P>PROBLEM TO BE SOLVED: To improve physical properties such as heat resistance and acid resistance while suppressing swelling of starch when an aqueous suspension is heated by using a physical process not a chemical synthesis reaction. Ž<P>SOLUTION: Starch is put in a sealed container, and thereinto superheated steam is introduced. The swelling of the aqueous suspension of the starch can be suppressed by heating at a temperature equal to or higher than 102°C, and the physical properties such as heat resistance and acid resistance can be improved.
