The present invention provides a process for producing a composition containing a high concentration of aglucone isoflavones, which comprises adding glucone isoflavones to the fermentation of microorganisms which are generally recognized as safe, and can express or produce &bgr;-glycosidase on a soy-based substrate. The present invention also provides a composition containing a high concentration of aglucone isoflavones produced in accordance with the process of the invention.
