PURPOSE: A manufacturing method for sauce with a wine taste and the sauce of the wine taste are provided to improve flavor and taste of meat while softening the meat or a product made of various kinds of meats, and to prevent burning of the meat. CONSTITUTION: A manufacturing method for sauce with a wine taste includes the following steps: heating purified water 26 weight% ~ 30 weight% in a sauce manufacturing tank for 20 ~ 30 minutes; mixing the heated purified water with maltitol or D- sorbitol liquid 18 weight% ~ 45 weight%, whine taste source mix 25 weight% ~ 3.5 weight%, soy sauce 0.95 weight% ~ 10 weight%, and red pigment 0.05 weight% ~ 1.5 weight%; sterilizing the sauce for 10 ~ 40 minute after heating the sauce to 70 ~ 95°C; supplying cooling water to a partition wall of a double-jacket after mixing the grape wine 30 weight% ~ 10 weight%; aging the sauce for 24 ~ 48 hours in 0 ~ 10°C after wrapping the sauce(S50). |
