摘要 FIELD: food industry. ^ SUBSTANCE: invention refers to food industry, in particular to production of bakery products intended for protective diet. The method includes preparing a medium for activation, placement of fragmented compressed yeast into the nutrient medium with obtaining the mixture and ageing the mixture. The nutrient medium is prepared by mixing flour, water and powder of leaves of stevia. The powder is produced by drying leaves of stevia up to humidity of 10-11%, followed by grinding in a thin rotating spiral film with thickness of 0.1-0.5 mm at a pulsating pressure gradient of 2.7 MPa and a temperature of 25-30C. At that the powder is added in amount of 0.5-1.5% of flour weight in terms of finished bakery products. ^ EFFECT: compressed yeast obtain dough fermentation property, reducing duration of technical process and improving quality of bakery products. ^ 1 tbl, 3 ex
