摘要 FIELD: food industry. ^ SUBSTANCE: invention refers to food industry, in particular to manufacture of bakery products intended for protective diet. The method includes preparing a medium for activation, placement of fragmented compressed yeast into the nutrient medium with obtaining the mixture and ageing the mixture. The nutrient medium is prepared by mixing flour, water and powder of debranned red rice obtained by its fragmentation and subsequent crushing in a thin rotating spiral film with thickness of 0.1-1.0 mm at a pulsating pressure gradient of 10-30 MPa and a temperature of 25-30C. The powder is added in amount of 1-3% of flour weight in terms of finished bakery products. ^ EFFECT: compressed yeast obtains high dough fermentation property, the process technology duration is reduced and bakery products quality is improved. ^ 1 tbl, 3 ex
