A strain of bacteria Lactobacillus acidophilus IMB B-7174 is used in production of starter cultures for rennet cheeses, is high-technology, has frank antagonistic action towards the wide range of pathogenic and opportunistic microorganisms, moderate energy of acid formation in milk at different temperatures, high capacity of forming of low-molecular peptides, salt and thermal-shock resistance, low potassium nitrate sensitivity. |
