PROBLEM TO BE SOLVED: To provide a fryer which makes oil temperature more stabilized around a target value. SOLUTION: In a fryer which heats oil with a heater, a surface temperature feedback control is performed so that a surface temperature Kh may become a surface temperature target value Kh* when an oil temperature Kq is under a change reference oil temperature Ks (time t0-t3), an oil temperature feedback control is performed so that the oil temperature Kq may become an oil temperature target value Kq* when the oil temperature Kq is a change reference oil temperature Ks or more (time t3-). Thereby, the oil temperature Kq is raised for a short time since heating starts and it can be stabilized around the oil temperature target value Kq*. Moreover, it judges whether cooked objects were put into the oil and the oil temperature Kq fell during the oil temperature feedback control, then, while affirmative judgement is being made (time t4-t5), the heater makes 100% output and downshoot in the oil temperature Kq is controlled. Furthermore, if it judges that the state the cooked objects are put into the oil and the oil temperature Kq fell is recovered, the oil temperature feedback control is resumed (time t5-), and the overshoot of the oil temperature is controlled.
