The invention relates to an apparatus (1) for heating pieces of dough, comprising a baking chamber (4) for receiving pieces of dough, wherein the baking chamber (4) is at least partly thermally decoupled from the surroundings. The apparatus (1) further has a heat source for providing heat by means of a first physical principle for heating the baking chamber (4) and also has a moistening device (12) for producing at least one functional fluid to be introduced into the baking chamber (4). According to the invention, the functional fluid can at least also be produced in the moistening device (12) by means of a second physical principle differing from the first physical principle.
